Page contents: INGREDIENTS 3 packets Brookdale Jumpin strawberry jelly crystals 3 punnets fresh strawberries 300ml Farmdale fresh thickened cream 1 tsp White Mill vanilla extract 1 tbsp Merryfield icing mixture You will need a large, crown jelly mould or a bundt pan in non-stick or silicone. method To make the first layer of jelly, use 1 packet of jelly crystals, as per the packet directions. Pour the liquid into the mould or bundt tin and allow to set in the fridge for 3-4 hours until firm. In the meantime, wash 2 punnets of the strawberries. Wash and pat the strawberries dry with paper towel. Slice the green top off the strawberries and halve them. After 3 hours, make the other 2 packets of jelly crystals as per the packet directions. Set aside for 20 minutes to cool. Once the first packet of jelly in the mould or tin is set, place the halved strawberries evenly around on top of the jelly. Then slowly pour the liquid jelly over the top of the set jelly and strawberries. Allow to set overnight. Once the jelly is set, dip the tin in and out of a deep container filled with boiling water for a few seconds. This will loosen the jelly from the mould or tin. Place a round display platter over the mould or tin, then carefully turn upside down to allow the jelly to slide out onto the display platter. Wash and pat dry the remaining strawberries. Halve the strawberries and arrange around the outside of the jelly. Before serving, combine cream with vanilla extract and icing mixture and whip to firm peaks. Fill a piping bag with a large star nozzle to pipe cream into the middle of the jelly.
